Ingredients
- Oysters fresh 12 ea
- Caviar 30 gm
- sauce
- zuchinni 75 gm
- garlic 5 gm
- Stock 200 ml
- Cream 100 ml
- Lettuce Boston ( bibb lettuce) 100 gm
- EVOO ( extra virgin olive oil) 50 ml
- Salt 5 gm
- Microgreens / Frisee as needed
Instructions
method
- Fresh Oysters , need to be shucked and cleaned of shell and set aside
- in a pan, add EVOO saute zuchinni , garlic , then add stock and cream
- simmer till zuchinni cooks , season
- in a blender add all ingredients and the lettuce leaves ,
- blend till smooth , strain , check seasoning , set aside
- in the pan add the sauce warm it up add the oysters and warm it up for a few seconds
- arrange to be served , top with caviar .
- garnish and drizzle EVOO
