Ingredients

  • Pork Spareribs 2 kg
  • Onion paste 100 gm
  • garlic paste 15 gm
  • ginger paste 10 gm
  • Oregano dry 5 gm
  • Thyme dry 5 gm
  • Paprika 15 gm
  • Brown sugar 45 gm
  • Salt to taste
  • Black pepper 5 gm
  • ketchup 30 gm
  • Tomato salad
  • Tomato 400 gm
  • Coriander
  • scallion as needed
  • Dressing
  • Honey 15 gm
  • mustard 15 gm
  • Red wine vinegar 15 ml
  • Evoo ( extra virgin olive oil) 30 ml
  • Salt to taste
  • pepper to taste

Instructions

method

  1. Mix all ingredients for the ribs and rub it on the pork and leave for a few hours
  2. arrange it on a roasting pan ,
  3. cover it with Aluminum foil and roast in oven at 160C for 45 mins
  4. rest for 15 mins
  5. Blend all ingredients for the dressing except oil and add oil gradually to emulsify
  6. serve with Tomato salad and Honey mustard dressing
