Ingredients

  • Cauliflower – 300 gm
  • Onion – 100 gm
  • carrot – 150 gm
  • celery – 50 gm
  • cartofi dulce – 150 gm
  • usturoi – 5 gm
  • Thyme – 2 gm
  • basil – 5 gm
  • ulei – 100 ml
  • foi de dafin – 1 gm
  • paste tomate – 150 gm
  • Red quinoa – 50 gm
  • Green peas – 100 gm
  • spinach – 100 gm
  • ardei gras – 150 gm
  • ceapa verde – 50 gm
  • usturoi verde – 50 gm
  • Cartofi – 1500 gm
  • Salt – to taste
  • pepper – to taste
  • bread crumbs – 20 gm
  • Parsley – 20 gm
  • stock pot 4 ltrs – 2
  • blender – 1
  • Chopping Board – 1

Instructions

  1. Cut vegetables in small dices .. Or grate the vegetables roughly rim cauliflower in smaller florets set aside Boil quinoa in salted water , set aside
  2.  Peel and oil potatoes to make a mash , when cooked , mash and set aside
  3. in a pan add oil, saute vegetables till slightlycaramelised ,set aside
  4. add tomato paste and boiled quinoa
  5. add the green vegetables and cook slightly ,
  6. add seasoning and set in a casserole
  7. pipe mashed potato over , sprinkle with bread crumbs and bake
  8. bake for 25 mins at 180c
  9. serve hot as shown
