Ingredients

  • Lamb leg 1.2 kg
  • lemon 2 ea
  • Minced lamb 300 gm
  • Lamb caul( prapure) 200 gm
  • Kalamata olives ( seedless) 50 gm
  • Urzici 30 gm
  • ceapa verde 50 gm
  • usturoi verde 50 gm
  • Parsley 30 gm
  • Cimbru 5 gm
  • Rosemary 5 gm
  • EVOO 75 ml
  • garlic 10 gm
  • sundried tomato 20 gm
  • Salt to taste
  • Crushed black pepper 5 gm
  • mustard dijon 15 gm
  • egg 1 ea
  • New potatoes
  • New potatoes 600 gm
  • EVOO 50 ml
  • Salt to taste
  • pepper to taste

Instructions

  1. clean the herbs
  2. Blend the herbs with evoo
  3. add garlic and mustard
  4. mix the green puree to the minced meat, add egg , set aside
  5. debone the lamb, zest the lemon and add juice , flatten it a bit
  6. season, add the stuffing
  7. wrap it in caul ,rub olive oil
  8. Roast in a hot oven for 1 hour till cooked
  9. Rest and slice
  10. serve with new potatoes
