Ingredients

  • Tortilla wrap 4 buc
  • oua 2 buc
  • Rotisserie chicken cooked ahead 600 gm
  • Roasted eggplant 400 gm
  • Salad leaves 0.5 leg
  • Grated cheeses ( Feta or Telemea) 150 gm
  • Tomatoes 250 gm
  • oil to fry 40 ml
  • sauce base ( to be blended)
  • lemon juice 50 gm
  • Honey 10 gm
  • mustard 5 gm
  • chilli paste ( sriracha) 5 gm
  • Evoo ( extra virgin olive oil) 100 ml
  • Salt to taste
  • pepper to taste

Instructions

method

  1. debone chicken and shred , set aside
  2. blend all ingredients for sauce and set aside .
  3. beat eggs and dip wrap and fry in a pan
  4. set aside
  5. arrange eggplant salad
  6. salad leaves , sliced tomatoes , grated telemea
  7. drizzle with sauce , and fold wrap , serve hot
