Ingredients
- Tortilla wrap 4 buc
- oua 2 buc
- Rotisserie chicken cooked ahead 600 gm
- Roasted eggplant 400 gm
- Salad leaves 0.5 leg
- Grated cheeses ( Feta or Telemea) 150 gm
- Tomatoes 250 gm
- oil to fry 40 ml
- sauce base ( to be blended)
- lemon juice 50 gm
- Honey 10 gm
- mustard 5 gm
- chilli paste ( sriracha) 5 gm
- Evoo ( extra virgin olive oil) 100 ml
- Salt to taste
- pepper to taste
Instructions
method
- debone chicken and shred , set aside
- blend all ingredients for sauce and set aside .
- beat eggs and dip wrap and fry in a pan
- set aside
- arrange eggplant salad
- salad leaves , sliced tomatoes , grated telemea
- drizzle with sauce , and fold wrap , serve hot
