Ingredients

  • Avocado 1 ea
  • Mango almost Raw 1 ea
  • Salad Leaves 0.5 leg
  • Cucumber 3 ea
  • Cherry Tomatoes 250 gm
  • scallion 1 leg
  • red radish 2 buc
  • sauce base ( to be blended)
  • Garlic 3 gm
  • Honey 70 gm
  • mustard 8 gm
  • Evoo ( extra virgin olive oil) 50 ml
  • Salt to taste
  • pepper to taste
  • Cherry Tomatoes 1 ea
  • Evoo to drizzle ( extra virgin olive oil) 30 ml

Instructions

method

  1. wash salad leaves in cold water and set aside after drying in a salad spinner
  2. in a large bowl
  3. peel mango and use a peeler and shave slices
  4. peel cucumber and shave slices
  5. slice red radish thinly
  6. chop green onion , adiced avocado and gently mix all ingredients except salad leaves
  7. add salt and set aside till you prepare the dressing
  8. for the dressing in a a pestle ( morjar))
  9. add half clove garlic
  10. mustard and lime juice
  11. also add 1 sliced cherry tomato , add salt , pepper and crush all ingredients
  12. add evoo and try to emusify the dressing
  13. pour half the dressing over the cut vegetables ( cucumber, avocado and mango)
  14. on a plate or a platter ( depends how you would like to serve)
  15. arrange cleaned and torn salad leaves and top the vegetable salad over the leaves
  16. drizzle extra dressing over the leaves as needed.
  17. serve cold on a hot or warm summer day .
