Ingredients

  • Chicken Tikka
  • Chicken legs boneless ( pulpe pui dez) 800 pk
  • greek yogurt 150 gm
  • Tandoori masala 15 gm
  • Ginger paste 7 gm
  • garlic paste 5 gm
  • garam masala 5 gm
  • salt 10 gm
  • Vegetable Oil 15 ml
  • Tikka sauce
  • Tomatoes crushed canned 200 gm
  • tomato paste 30 gm
  • Ginger 5 gm
  • garlic 3 gm
  • Onion 50 gm
  • cardamom green 2 gm
  • water as needed
  • Tandoori masala TRS brand 10 gm
  • garam masala 5 gm
  • almond powder 30 gm
  • Salt 7 gm
  • Heavy Cream 150 ml
  • dried fenugreek leaves 2 gm

Instructions

method for Chicken tikka

  1. cut chicken in large cubes , add salt and set aside in a colander to drain
  2. in a bowl mix all the rest of the ingredients using a whisk
  3. marinade the chicken with the prepared mix for atlest 24 hrs
  4. skewer and BBQ on live flame or
  5. on a sheet pan , add oil, place chicken &roast in the hot oven at 250C for 10 – 12 mins
  6. set aside

method for Tikka sauce

  1. In a sauce pan / Pot place tomatoes, Tomato paste, ginger , garlic , onion and cardamom
  2. add the dry spices and simmer for 30 mins, add the almond powder and further simmer for 15 mins
  3. blend using a hand blender till smooth
  4. add toasted fenugreek leaves ,cream and simmer ,
  5. lastly add the cooked chicken
  6. simmer for 15 -20 mins till gravy thickens
  7. add salt if needed
  8. TASTE , and serve accordingly
