Cauliflower Cashew Curry with Basmati Pilaf

Ingredients

  • Cauliflower 500 gm
  • Sweet potato 150 gm
  • Green peas 50 gm
  • cherry tomatoes 50 gm
  • Veg Oil 30 ml
  • Turmeric 3 ml
  • Cummin powder 3 gm
  • Coriander powder 5 gm
  • Garam Masala powder 5 gm
  • Coconut milk 200 ml
  • fresh coriander leaves 15 gm
  • lemon juice 15 ml
  • Green chilli 15 gm
  • Curry base
  • Veg oil 60 ml
  • Onion yellow 100 gm
  • Garlic 5 ml
  • Ginger 10 ml
  • Cashew unsalted 50 gm
  • Salt to taste

Instructions

  1. Cut cauliflower, sweet potato and set aside
  2. in a stock pot add oil , saute Cashew set aside ,
  3. then add Onion, garlic, ginger and chillies plus water and simmer for 10 mins
  4. add the mix curry base in blender , make a smooth paste set aside
  5. in a stock pot add oil , when hot , add mustard and cummin seeds , and bayleaf
  6. wait till fragrant , add 50 ml water and spices
  7. saute a bit and add sweet potato first and later cauliflower and simmer till soft
  8. when almost cooked , add curry base and simmer for 10 mins
  9. lastly add peas, cherry tomatoes and cook for 5 mins
  10. finish with lemon juice and coriander leaves
