Cauliflower Cashew Curry with Basmati Pilaf

Ingredients
- Cauliflower 500 gm
- Sweet potato 150 gm
- Green peas 50 gm
- cherry tomatoes 50 gm
- Veg Oil 30 ml
- Turmeric 3 ml
- Cummin powder 3 gm
- Coriander powder 5 gm
- Garam Masala powder 5 gm
- Coconut milk 200 ml
- fresh coriander leaves 15 gm
- lemon juice 15 ml
- Green chilli 15 gm
- Curry base
- Veg oil 60 ml
- Onion yellow 100 gm
- Garlic 5 ml
- Ginger 10 ml
- Cashew unsalted 50 gm
- Salt to taste
Instructions
- Cut cauliflower, sweet potato and set aside
- in a stock pot add oil , saute Cashew set aside ,
- then add Onion, garlic, ginger and chillies plus water and simmer for 10 mins
- add the mix curry base in blender , make a smooth paste set aside
- in a stock pot add oil , when hot , add mustard and cummin seeds , and bayleaf
- wait till fragrant , add 50 ml water and spices
- saute a bit and add sweet potato first and later cauliflower and simmer till soft
- when almost cooked , add curry base and simmer for 10 mins
- lastly add peas, cherry tomatoes and cook for 5 mins
- finish with lemon juice and coriander leaves
